Who doesn't love Satay sauce? Now I am not a fan of peanuts on their own but I do love a great satay. It goes well with almost anything. Use it as a dip, stir it in as a sauce or pour over as a topping.
Satay sauce goes by many names and is widely found in the cusines of Thailand, Indonesia, Malaysia and even Africa.
The core ingredient in a good Satay Sauce is of course the peanuts, ground and roasted to a fine powder.
These days we take the easy way out and use store-brought peanut butter! I prefer the smooth kind but if you are a fan of the crunchy then by all means, go for it!
Our Satay Spice Blend has a fine balance of spicy and earthy with cumin, chilli and sesame seeds. These ingredients have been chosen to balance the richness of the peanuts. As you assimilate all the ingredients gently over a low heat the flavours meld together into something quite special.
Today we are making Satay sauce with udon and kale. You can use any kind of noodle and any kind of vegetable to go with it, it is entirely upto you!
You can also use the sauce as a dip at your next party. Ditch the supermarket dips and make this one within a few minutes. Your guests will be amazed!
Without further delay, lets find out how to create a one-of-a-kind satay sauce!
125g (4.5oz) button mushrooms
1 clove garlic, chopped
150g (5 oz) udon noodles, cooked
1 cup kale
10g (1 tbs) Satay Spice Blend
2 tbs vegetable oil
5g (1/2 tbs) sugar
100g (3.5oz) smooth peanut butter
- Saute the button mushrooms with butter and garlic and set aside
- Cook the udon as required and blanch the kale for 20 seconds in boiling water
- Dry roast the Satay Spice Blend for one minute until fragrant
- Add oil, sugar, peanut butter and a little water. Stir well
- Slowly add more water and keep stirring until the sauce reaches the consistency you desire
- Add the udon and kale directly into the satay sauce and stir until well coated
- Top the satay udon with the sauteed mushrooms, chilli flakes and roasted peanuts
