Spice Quarter | Ras El Hanout Spice Blend | Spiced Pistachio Kulfi

 

 

Frozen dairy desserts bring back some great childhood memories. Running after the ice cream van or sticky melting popsicles at the beach. Almost every culture around the world has a frozen dairy-based sweet treat. 

In India, there are hundreds of recipes that involve milk or milk products however kulfi can literally be traced all the way back to the Mughal Empire in the 16th Century. 

As with any delicious food, there is always an enterprising foodie that finds a way to recreate the dish in a simpler and easier manner. The credit for this recipe goes to my sister and it is one of her best ones yet!

The texture of kulfi is different to ice cream. While ice cream is creamy and scoopable, kulfi is often eaten on a stick, like a popsicle. Kulfi is also richer than ice cream and is less aerated.

At Spice Quarter we have been waiting for the ideal spice blend to add to this kulfi recipe! And we found it with Ras El Hanout.

Ras El Hanout is a North African spice mix that is usually used to make dishes with meat, rice or couscous. Did you know that Ras El Hanout translates to 'Head Of The Shop'? It means that it was a mix of the best spices available.

We are so thrilled to introduce our Spiced Pistachio Kulfi. A simple recipe, easy to make the previous night and a sure-fire hit at that dinner party!

Ingredients

  • 50g pistachios
  • 1 can evaporated milk (375ml)
  • 1 can condensed milk (400g)
  • 1 can reduced fat cream (250ml)
  • 1/2 tbs Ras El Hanout spice blend

Method

  • Add the pistachios to a zip-lock bag and use a rolling pin to crush roughly

  • In a bowl mix the evaporated milk, condensed milk and reduced fat cream and mix well until combined

  • Add the pistachios and the Ras El Hanout Spice Blend to the mixture and stir well
  • Reserve some pistachios for garnish

  • Pour the mixture into moulds and freeze overnight*

  • Top with pistachios and serve
