Spice Quarter Australia | Tikka Spice Blend | Grilled Chicken Kebabs

 

Who doesn't love a great kebab? There is something about chunks of meat and veg, slathered in spicy marinade, grilled with the perfect char and covered in a soothing yoghurt dressing. I am hungry just thinking back to the day we made these beauties. We had a crowd to feed that day, friends from overseas had come over and it was an unusually gloomy day. 

Our plans for a barbeque were shelved and we decided to have a finger food party instead! These grilled chicken skewers were perfect party food. It only takes 10 minutes to prep the ingredients and marinade. We completed the prep ahead of time and once our guests arrived, we grilled the skewers so they could have a fresh, delicious snack!

We have combined the skewers with a cooling yoghurt dip in case you find the spice mix a little hot. Use the dip on top of the skewers they way we served it or set it in a bowl so your guests can help themselves. 

The spice mix used in this recipe is the Tikka Spice Blend. This blend has lovely spices like cumin, cardamom, caraway, nutmeg, chilli and sweet paprika.

You can also use this blend in curries. We promise it will be a BIG hit!

Ingredients:

  • 1 cup coriander
  • 1/2 green chilli
  • 1 clove garlic
  • 1 tbs olive oil
  • 1/4 tbs salt
  • 2 cups yoghurt
  • 1/4 cup shredded cucumber
  • 10g Tikka Spice Blend
  • 1 tbs lemon juice
  • 300g chicken, cubed 
  • 1 onion cubed
  • 2 capsicum cubed
  • wooden skewers (soaked for 10 mins in warm water)

  

Method:

Spice Quarter Chicken Tikka Coriander

  • To make the coriander dressing, blend the coriander, chilli, garlic with some olive oil and salt until smooth

Spice Quarter Coriander Dressing Tikka Spice Blend

  • Stir the coriander dressing into one cup of yoghurt and shredded cucumber

Spice Quarter Tikka Spice Blend

  • For the marinade, mix the remaining yoghurt with the Tikka Spice Blend and lemon juice

Spice Quarter Tikka Spice Blend

  • Marinate the chicken pieces, onion and capsicum and refrigerate for one hour

  • Skewer the chicken and vegetables and cook on a hot grill pan
  • Turn after 5 minutes and grill until completely cooked*

  • Serve the Grilled Chicken Tikka Skewers with the coriander dressing

Grilled chicken tikka kebabs are ready! Vegetarians, substitute chicken with cubed cottage cheese (ask for Paneer at your local Indian store if your supermarket does not have it)

Make sure you seal your spices tight and store in a dry place until you need it again.
