Spice Quarter Australia | Chermoula Spice Blend | Chermoula Salmon

Since it is summer here in the southern hemisphere, it is the best time of year for fresh salmon! The best way to hero this beautiful seafood and do justice to it is to keep it simple. 

However, I am not a fan of bland flavours so the challenge here is to use bold, vibrant flavours without overpowering the salmon. 

Enter - Chermoula!

We tried Chermoula for the first time in a Moroccan restaurant and I was struck by how flavourful it was. When asked, I was told that Chermoula can have up to 15 different herbs and spices! Like many spice mixes, there are hundreds of ways you can make Chermoula and every chef has their own unique recipe.

This made Chermoula the perfect spice to add to the Spice Quarter collection. If you want to make it yourself you would need to source several herbs and spices, some of which are very distinct and hard to find. 

So we have done the hard work for you! All you need to do is follow the simple recipe below and soon you will have a delicious baked salmon with a crusty herb and spice topping. We have combined this dish with some couscous to honour its Moroccan heritage. 

If you are a vegetarian, you can substitute salmon for butternut squash.

Ingredients:

  • 2 salmon fillets skin on
  • 20g Chermoula Spice Blend
  • Olive oil
  • Coriander
  • Salt & Pepper
  • Couscous
  • Feta
  • 2 red bell peppers - roasted and sliced

Method:

  • Mix the Chermoula Spice Blend with some olive oil  and chopped coriander to form a paste

  • Season the salmon with salt and pepper and coat with the Chermoula mix. Marinate for atleast an hour

  • Bake the fish skin side down in the oven at 200C(390F) for 15-20 minutes* or until cooked to your liking

Spice Quarter Chermoula Salmon Couscous

  • Cook the couscous as per directions on the pack and mix with the roasted peppers and feta

Spice Quarter Chermoula Salmon

  • Serve the salmon on a bed of couscous garnished with some more coriander and feta

Make sure you seal your spices tight and store in a dry place until you need it again.
