Soft buttery scones fresh from the oven are so comforting! Remember the ones your nanna made? With fresh cream and sweet jam. What a wonderful childhood memory!
This recipe for scones is comfort food for the adults but with a twist! Our recipe for scones is very simple to make. If you have a food processor this is a very quick and easy recipe that anyone can make.
If you do not have a food processor, not to worry. Simply use a whisk and some elbow grease.
Personally, I just love kneading dough! If you aren't a fan of it like I am, use the dough hook in your food processor.
This time we are using our versatile Bush Spice Blend. With pure herbs like thyme, rosemary, basil, oregano and sage and spices like coriander and cumin this blend packs a punch!
Without further delay, lets make some scones!
- 200g plain flour
- 1tbs baking powder
- 1 egg
- 10g Rustic Spice blend
- 100g sundried tomatoes
- 1 cup parmesan
- 2 tbs olive oil
- 1 cup yoghurt
- In a food processor add the flour, baking powder and Rustic Spice Blend. Pulse until combined
- Add the parmesan and sundried tomatoes and pulse again
- Add the egg, 2 tbs olive oil and 1 cup of yoghurt. Pulse until a slightly sticky dough is formed
- Roll the dough onto a floured surface and knead until smooth
- Roll flat into a 2cm thick sheet and slice into squares
- Sprinkle with parmesan and bake at 180 degrees celcius for 20 minutes or until firm
- Serve with butter
Make sure you seal your spices tight and store in a dry place until you need it again.
