The term 'Nawab' originated in the Mughal Empire many hundreds of years ago. 'Nawab' was the title bestowed upon a person such as a king or a person of distinction.

The term is of Urdu origon and was born during the golden years of the Mughal empire.  The Mughals and their well travelled citizens introduced a remarkable array of delicious flavours wherever they went.

Mughlai food is rich and aromatic and it has heavily inflenced the current cuisines in places like India, Pakistan and Bangladesh.

It is no wonder that this style of food is immensely popular. No two cooks will ever serve a dish that tastes the same! The flavour in every dish is down the cook themselves and the attention they devote to their craft.

At Spice Quarter we want to bring the flavours of the world to your kitchen. Our Nawabi Spice Blend is a combination of Asian and Middle Eastern spices like Cumin, Fennel, Caraway and Turmeric.

We have created a simple yet delicious recipe that is a sure fire crowd pleaser.

Nawabi Chicken Rice

Ingredients:

  • 500g (1lb) diced chicken 
  • 2 cups cooked white rice
  • 20g (2tbs) Nawabi Spice Blend
  • 1 red onion, sliced & fried
  • 1/3 cup chopped mint leaves
  • 1/3 cup chopped coriander leaves
  • 1 cup yoghurt
  • lemon juice

Method:

  • Mix 1 cup of yoghurt, mint, coriander, half the fried onions, salt and the Nawabi Spice Blend to make the marinade.
Spice Quarter Nawabi Spice Blend
  • Marinate the chicken in the spiced yoghurt mixture for atleast one hour.

Spice Quarter Nawabi Spice Blend

  • Place the marinated chicken in a baking dish. Layer the rice on top of the chicken. Top with the remaining fried onions.

Spice Quarter Nawabi Spice Blend

  • Layer the rice and the chicken in a baking dish and top with the fried onions.
  • Bake in the oven for 30-35 minutes* at 180C (350F) until the chicken is cooked.

  • Stir the mixture halfway through to mix the spiced chicken with the rice

  • Once cooked, stir and serve with a drizzle of lemon and yoghurt.

*Cooking times are a guide and may vary depending on your appliance

Vegetarian Option - Nawabi Vegetable Rice

Ingredients:

  • 500g of chopped mixed vegetables (capsicum, carrots, french beans and potatoes)
  • 2 cups white rice
  • 20g (2tbs) Nawabi Spice Blend
  • 1 red onion, sliced & fried
  • 1/3 cup chopped mint leaves
  • 1/3 cup chopped coriander leaves
  • 1 cup yoghurt
  • lemon juice

Method:

  • Mix 1 cup of yoghurt, mint, coriander, half the fried onions, salt and the Nawabi Spice Blend to make the marinade
  • Marinate the vegetables in the spiced yoghurt mixture for atleast one hour
  • Place the marinated vegetables in a baking dish. Layer the rice on top of the vegetables. Top with the remaining fried onions
  • Bake in the oven for 30-35 minutes* at 180C (350F) until the vegetables are cooked
  • Stir the mixture halfway through to mix the spiced vegetables with the rice
  • Once cooked, stir and serve with a drizzle of lemon and some yoghurt

Nawabi rice is ready!

Make sure you seal your spices tight and store in an dry place until you need it again.
